Nose: Very fresh and clean as a whistle. Seems to be untainted by any wood influence at all. Banana, vanilla custard, lychee, soap flakes, peat. Invigorating.
Palate: Pepper as if it’s straight from the shaker into the malt. Earthy peat, banana over oats, toffee, some orange and lemon.
Finish: Is medium length, dominated by peppery spice, and underpinned by clean malt and lingering earthy peat.
Last Word: Very well crafted. A good one for displaying the difference between the taste of peat and smoke.

Yoichi 12 45%abv

You can definitely see the common lineage of this one and the Yoichi 10. The extra age here is apparent in both the focus and complexity of the whisky. There is an extra dollop of peat (sweet, earthy and a little vegetal) and a lovely smoky development. One of my top few daily drams.

Nose: Light but typically fresh Hakushu. Lime, Pine, wet moss/earth, tinned pears, salt, a little spearmint.
Palate: White pepper, lime, wet forest floor, almonds.
Finish: Lime, almonds, peach candies and some drying oak. A lightweight aperitif style. Last Word: Serious whisky fans would be better served saving for the 12 year old in my opinion.

Nose: Tempura batter, teak, leather, toffee, potato skins, fresh baked biscuits, banana. Classy.
Palate: Honey over baked oats, creme brulee, silky oak, leather,banana, cola, tobacco leaf, nutmeg, nouget. Very smooth.
Finish: Honey, smooth oak, butter, cashews, tobacco leaf, cola, maples syrup, balanced.

Last Word: A lovely affordable Yamazaki, this bottle is emptying fast..

Nose: Vanilla as expected. Oak, sawdust, pineapple, grapefruit, strawberries, menthol and quite a bit of pepper. Water strengthens the pineapple and grapefruit and adds mint.
Palate: Fairly aggressive attack. Hot spices, oak, toffee, strawberries, vanilla, some peat/smoke. Water enhances the sweeter elements.

Finish: Quite dry and oaky. Then a little pineapple, strawberries, peppermint, pepper, peat and coal/tar. Errs a little too far on the dry woody side. Water helps reduce this.

Nose: Rich and deep. Old leather chairs, pipe tobacco, mixed herbs, tea, orange, soy/oyster sauce combo, beef stock cubes, pepper, marmelade, pineapple, apricots, chocolate, peat.
Palate: Rich and tangy. Palate smacking. Sweet spice and mixed herbs, old leather, pipe tobacco, marshmellows, marzipan, marmelade, strawberry jam, oak, bonfire smoke. Water brings out the tea, damp forests, pepper.

Finish: Medium length on the flavours from the palate plus some toffee then the trailing bonfire smoke.

Last Word: Love it!

Nose: Mixed peel, ginger, plums, honey, oak, pears and apples, lemon over shellfish, salt, port, pepper, savoury shapes biscuits, pipe tobacco, leather, maple syrup and a little soy sauce.
Palate: Nutmeg, cinnamon, marshmellows, oak, maple syrup, cigar leaf, toffee, burnt orange jus, rhubarb, port, burnt twigs, raisins, currents, vanilla.

Finish: A fruity/dry combo on the flavors of the palate and a little smoke/peat/burnt twigs. Complex.

The Singlemalt Chichibu Golden Horse 12-year-old, Bottle # 0263 2008 56%

Palate: As per the nose with some big spices. Powerful yet balanced. Salt. Fruity, mixed nuts, with some strawberry sherbet, nougat and a slightly oily mouth feel.
Finish: Hot spices, sweet/earthy peat, dried fruits, menthol, smoke and some minerals.
Last Word: This is one of my favorite Japanase whiskies. It has fantastic balance and I’m a sucker for a malt with big spices. One of those rare whiskies that works as a daily dram and yet has that wow factor with every pour.

The Cask of Hakushu Heavily Peated 1993 #3B40573 58% White Oak

Nose: Fairly subtle peat hangs over balanced oak, pine and varnish. Then, after a little time, that Japanese magic of lychees and cherry blossoms breaks the surface, followed by some cereal notes and earthiness. After about 20 mins, some brineyness becomes apparent.
Palate: Sweet peat comes through in a big way. A lovely spice hit of cinnamon/nutmeg/salt followed by a hint of Hubba-Bubba that I’ve found in few Japanese whiskies (particularly those from Yoichi). A little water brought out some chocolate.
Finish: Mainly on the palate with sweet peat, soft oak, and a sweet/hot spiciness dominating. Water brings out the chocolate.
Last Word: Not a peat monster by any stretch, but an extremely well balanced and complex whisky.

Nose: Sherry, oak, raisins and currants
Palate: Sherry, dark cherry, oak, dark chocolate, blood oranges, raisins, Christmas pudding.
Finish: Plums, nutmeg, lemon sherbet, mixed peel zing. Quite Aberlour A’bunadh like but smoother at a similar alcohol content.”

Yoichi Taradeshi Genshu Single Cask Cask No. #408511 61%

Nose: Huge oak, huge stone fruits/stone fruit seeds, varnish, a hint of soapiness and some florals coming through with time. Then some nuttiness and smoked fish as the florals and oak get a little bigger. Sounds like it’s a bit all over the place but it’s a complex single cask and
I love them because of their individuality. The palate is massive, with giant hit of spice/salt infused oak and nuts. If it had had some of that lovely Yoichi peatiness in there somewhere it would have scored a point or 2 higher. The finish is long and warming and a little dry.

Mars Komagatake Moltage Sherry Cask 10YO 40%

japanese-whisky-080Nose: Honey, sherry, blood oranges, lime, a little bit of oak, a kind of burnt toffee smell, and something maritime, like seaweed.
Palate:
It is biscuity, with some bitter chocolate, nuts, malt, toffee and smoke.
Finish:
Mainly toffee, nuts, smoke and some lingering bitterness.
Last Word: I have to admit that on first opening I didn’t take much of a liking to this whisky and probably would have given it a score of around 73/100.It’s been open for around 7 months now and, while never going to be a world beater, it has improved quite a bit and scores. The smoke saves it.

Mars Whisky The Malt of Kagoshima 1984 25YO Sherry Cask #0578/3081 46%

Nose: Sherry and toffee at first, then changes to an almost Bourbon-esque grain like quality. Licorice, pears, red apples, cinnamon doughnuts, yeast, match heads. Dry cement mix.
Palate: It first touches the palate with a certain lightness then there is a big explosion of peppery spices. Again, match heads, but balanced and not overly sulphurous. On the second sip, the sherry comes through with tons of mixed peel zing. The third sip offers some lemon and mint. On my fourth sip, I noticed there was a nice saltiness sizzling on the tip of the tongue.
Finish: A little dry and fairly short, with burnt toffee, match heads, mint chocolate, cinammon and pipe tobacco. After a few sips, there is a nutty creaminess that floats around the palate and lengthens the finish.
Rating: 87/100

Suntory Single Malt Whisky Hakushu Aged 15 Years. 56%abv

Nose: Sweet oak (reminds me of a number Hanyu’s I have tasted in this respect), which is beautifully intergrated into the malt. Varnish, roasted chesnuts, fresh baked scones with butter and a slightly burnt apple crumble.
Palate:Hot, Hot, Hot! Not a burning alcoholic heat, more like chillis. Probably the hottest whisky I have tried and I love it. Huge spice: pepper, salt, chilli, nutmeg and cinnamon. Lots of sweet oak, peanuts and marshmellows.
Finish: Long, hot, spicy and oaky, but with a certain candied sweetness. This was not a whisky I would choose to add water to because I enjoy the rush of it at cask strength.
General comment: I’ll make no bones about it, I love this whisky.

White Oak Distillery SM Aged 5 Years. 45%abv

Nose: The colour is honey and the nose follows suit. Is this only 5 years old? No roughness at all! Also soft oak, tinned apricots, pear, treacle and fresh dough. Smooth and balanced.
Palate: Honey and treacle on crumpets, soft oak, pear, dough, nutmeg and ginger.
Finish: Nicely spicy, yet also creamy, with good length. Some mineral-like qualities and lingering………lingering smoke. Where did that come from?
General Comment: Really fantastic for the age.
Rating: 82/100

Ichiro’s Malt The Game 9YO 2000. 61.2%abv

Nose: A massive bowl of stone fruits mixed with oak, bran and malt. There is a bitter sweet element (with the emphasis on the sweet). Caramel/vanilla popcorn and some of the floral notes I often find in Ichiro’s Malts. After a while, those floral notes become more prominent.
Palate: Gristy, fruity, oaky, malty, and spicy. Chocolate and marmalade. Water brings the spicy/tangyness to the fore. Just fantastic!
Finish: Long, warming, oaky, spicy, floral and fruity.
Last Word: This is another fine young Ichiro’s malt. It is complex, powerful and balanced. A firm favourite of mine: very moreish but, as it is not easy to find, I tipple sparingly.

Suntory Pure Malt Whisky Tarudashi Genshu 58%abv

Nose: Oak and toffee. Wine and brine.
Palate: As expected, very punchy at 58%. This one will need water as the hot spices at cask strength overwhelm everything else. With water, this whisky becomes more creamy and custardy. Not particularly malty.
Finish: With water, it is warming, of good length, creamy, spicy with a hint of wine.
Last Word: This won’t be on the repeat purchase list, but it was fun and worth trying.

Miyagikyo no age statement. 43%abv

Nose: Pine, lime, green apples/apple peel, liquorice. The malt is there, but is in the background. The description sounds woody/citrusy, but there is also a sweetness there. The oak rears it’s head after about 5 minutes, also some soapiness. Definite agave notes after about 10 minutes (nice for me, as I enjoy a good tequila as well).
Palate: Shows plenty of youthful exuberance. Creamy. Brazil nuts, nutmeg, malt and some lemon sherbet sweet tang.
Finish: Nicely malty now. Nutty, sweet spices. Not particularly long.
General comment: I also have a bottle of the Yoichi No age statement. I prefer the offering from Miyagikyo for once. Incredible value for a single malt in Japan at around 1,000-1400 yen.

Ichiro’s Malt The Final Vintage of Hanyu 2000. 9 years old. 61.1%abv

Nose: Another woody Hanyu, but not in the same sweet variety as the likes of the Double Distilleries. Lots of varnish, also blueberries, subtle florals and oregano.
Palate: Without water, the spices run wild with plenty of heat. It warms the chest, as one might expect. A fair whack of dry woodiness as well. Adding water (which is pretty much mandatory) brings the florals out a little more on both nose and palate. Become slightly vegetal tastes, including steamed broccoli. There’s also a toastiness, along with black pepper.
Finish: With or without water, this is fairly long, varnishy, woody, spicy and ultimately drying.
Last Word: A little to woody and austere for my tastes. For me, it lacks finesse.
Rating: 80/100

Karuizawa Exceed Aged 12 Years. 40%abv

Nose: Clean and fresh. Grassy notes, along with pear, orange, golden syrup, salt and varnish
Palate: The mouth feel is clean, with pepper, new leather, orange chocolate, toffee and a hint of smoke.
Finish: Medium length with marmalade, pepper; grassy at the start, then adds mint, toffee and fresh cut timber.
Last Word: This is a nice, refreshing Karuizawa and a welcome counterpoint to this distillery’s often full-on single cask style.
